Seaweed, often known as “haitai” in Chinese cuisine, is a versatile and nutritious ingredient used in various dishes. Rich in iodine, iron, and calcium, seaweed adds a unique flavor and texture to your meals. In this article, we’ll explore multiple methods to cook Chinese seaweed, highlighting simple recipes that anyone can follow.

Preparing the Seaweed

Before cooking, it’s essential to prepare the seaweed properly. Chinese seaweed, particularly the dried variety known as Zicai (紫菜), is commonly used. This dried seaweed has a dark purple color and a slightly salty taste. When choosing seaweed, look for one that is dark purple with a natural luster. High-quality dried seaweed has a lovely appearance and should not be completely dark or super red.

To prepare the seaweed

Rinse: Rinse the dried seaweed under cold water to remove any dust or impurities.

Soak: Soak the seaweed in cold water for a few minutes until it softens. You can then drain it and use it immediately or store it in the refrigerator for later use.

Cooking Methods

There are multiple ways to cook Chinese seaweed, each bringing out different flavors and textures. Here are some popular methods:

Seaweed Soup

Soup is a classic way to enjoy seaweed. One popular recipe is Seaweed Egg Drop Soup, a delicious and healthy dish perfect for a cold winter day.

Ingredients:

  • Dried Chinese seaweed (10g)
  • Eggs (2)
  • Dried small shrimp (optional)
  • Scallions
  • Ginger (small piece)
  • Soy sauce
  • Salt and pepper
  • Sesame oil
  • Water or stock

Instructions

Boil Water: Bring water or stock to a boil in a pot.

Prepare Ingredients: Rinse and soak the seaweed. Chop the scallions and ginger finely. Beat the eggs in a bowl.

Cook Seaweed: Add the softened seaweed to the boiling water and let it cook for a couple of minutes.

Add Flavorings: Add the dried small shrimp, if using, and let it cook for another minute. Then, add the chopped ginger and a splash of soy sauce for extra flavor.

Egg Drop: Turn off the heat and wait until the water stops boiling. Swirl the water gently and pour in the beaten eggs slowly, allowing the eggs to form soft, silky ribbons.

Season: Season with salt and pepper to taste.

Garnish: Add chopped scallions and a drizzle of sesame oil for fragrance.

Serve: Serve the soup hot in bowls.

This soup is comforting and easy to make, requiring just a few minutes to prepare.

Seaweed Salad

Seaweed salad is another refreshing and healthy dish. It can be served as a side or an appetizer.

Ingredients

  • Dried Chinese seaweed (50g)
  • Sesame oil
  • Soy sauce
  • Rice vinegar
  • Sugar
  • Sesame seeds
  • Garlic (minced)
  • Red chili flakes (optional)

Instructions

Prepare Seaweed: Rinse and soak the dried seaweed in cold water until softened. Drain and chop into bite-sized pieces.

Boil Water: Bring a pot of water to a boil.

Blanch Seaweed: Blanch the seaweed in boiling water for about 1-2 minutes. Drain and rinse under cold water to stop the cooking process.

Make Dressing: In a small bowl, mix together sesame oil, soy sauce, rice vinegar, sugar, minced garlic, and red chili flakes (if using). Adjust the seasoning to taste.

Toss Salad: In a large bowl, toss the blanched seaweed with the dressing until well coated.

Garnish: Sprinkle with sesame seeds.

Serve: Serve the salad chilled or at room temperature.

This salad is crisp and tangy, with a hint of sweetness and a slight kick from the chili flakes.

Stir-Fried Seaweed with Vegetables

Stir-frying seaweed with vegetables is a quick and easy way to incorporate it into your meals.

Ingredients

  • Dried Chinese seaweed (30g)
  • Mixed vegetables (e.g., carrots, bell peppers, snap peas)
  • Garlic (minced)
  • Oyster sauce
  • Soy sauce
  • Sugar
  • Vegetable oil
  • Salt and pepper

Instructions

Prepare Seaweed: Rinse and soak the dried seaweed in cold water until softened. Drain and chop into bite-sized pieces.

Prepare Vegetables: Wash and chop the mixed vegetables into bite-sized pieces.

Make Sauce: In a small bowl, mix together oyster sauce, soy sauce, sugar, and a little water. Adjust the seasoning to taste.

Heat Pan: Heat a wok or large skillet over medium-high heat. Add vegetable oil.

Stir-Fry Garlic: Add the minced garlic and stir-fry until fragrant (about 30 seconds).

Stir-Fry Vegetables: Add the mixed vegetables and stir-fry for about 3-4 minutes until they are tender-crisp.

Add Seaweed: Add the chopped seaweed and stir-fry for another 1-2 minutes until heated through.

Add Sauce: Pour in the sauce and stir-fry until the vegetables and seaweed are well coated.

Season: Season with salt and pepper to taste.

Serve: Serve the stir-fry hot as a side dish or a main meal with rice.

This stir-fry is colorful and delicious, with a rich, savory sauce that complements the seaweed and vegetables.
