For the Year of the Snake, many Chinese restaurants celebrate with a creative take on the traditional yusheng salad. Typically, chefs shape ingredients into the form of the zodiac animal, and for the snake, this often includes shredded carrot, daikon, pineapple, zucchini, and raw fish. However, Summer Pavilion, a Michelin-starred restaurant at The Ritz-Carlton, offers a unique variation that stands out from the crowd.
The Prickly Sea Cucumber Yu Sheng ($238 for a small portion, suitable for four people) incorporates Japanese sea cucumbers, which resemble snakes in both appearance and texture. Marinated in a mixture of vinegar, garlic, and sugar before being cooked sous vide, the sea cucumbers offer a delightfully springy bite. Complementing this are crunchy vegetables and a large sago cracker, dyed with blue curacao liqueur to evoke the sea.
The subtle tang of the sea cucumber, paired with a lively dressing, provides a refreshing start to what is sure to be a rich meal.
