Ingredients for Lamb Patty

  • 2 1/2 pounds ground lamb
  • 1 jalapeno pepper (cored, seeded, and minced)
  • 3 scallions (white and light green parts only, finely chopped)
  • 1/4 cup finely chopped fresh mint leaves
  • 1/2 cup grated Parmigiano-Reggiano cheese

Zest of 2 lemons

  • 2 teaspoons lemon juice
  • 2 teaspoons kosher salt
  • 1/2 teaspoon ground peppercorns
  • 1/4 teaspoon cayenne pepper

  • 18 ounces of brioche dough (you can use a recipe from “The New Artisan Bread in Five Minutes a Day” or any other dough you prefer)
