How to Cook Chinese Chicken Curry

Chinese Chicken Curry is a delightful and flavorful dish that combines tender chicken pieces with a rich, aromatic curry sauce. This dish is perfect for a hearty family meal or a comforting dinner after a long day. Below, I’ll guide you through the process of making Chinese Chicken Curry, highlighting key steps and tips to ensure your dish is delicious and satisfying.

Ingredients

To make Chinese Chicken Curry, you’ll need the following ingredients:

Chicken: 500g of boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

Vegetables: 1 medium onion, finely chopped; 1 large carrot, peeled and diced; 1 large potato, peeled and diced; 1 cup of frozen peas (optional for added texture and nutrition)

Aromatics and Spices: 3 cloves of garlic, minced; 1-inch piece of ginger, grated or finely chopped; 1 tablespoon of curry powder; 1 teaspoon of turmeric powder; ½ teaspoon of ground ginger; a pinch of sugar; 1 teaspoon of cumin seeds (optional); 1 teaspoon of coriander seeds (optional); 1 cinnamon stick (optional)

Liquids: 400ml of chicken stock or vegetable broth; 1 tablespoon of soy sauce or tamari (for a gluten-free option)

Coconut Milk: 1 can (400ml) of coconut milk for a creamy texture and added richness (optional but recommended)

Seasoning: Salt and freshly ground black pepper to taste

Rice: Cooked rice for serving

Garnishes: Fresh cilantro, chopped (optional); lemon wedges (optional)

Preparation

Before you start cooking, make sure all your ingredients are prepared and measured out. This will make the cooking process smoother and faster.

Marinate the Chicken

In a bowl, toss the chicken pieces with a pinch of salt, freshly ground black pepper, and 1 tablespoon of cornstarch. This will help the chicken to retain its moisture and develop a nice texture when cooked. Set aside while you prepare the other ingredients.

Prepare the Vegetables

Peel and chop the onion, carrot, and potato into bite-sized pieces. This ensures they cook evenly with the chicken.

Toast the Spices (Optional but Recommended)

In a small pan over medium heat, toast the cumin seeds, coriander seeds, and cinnamon stick until fragrant. This step enhances the flavor of the spices. Once toasted, grind them using a mortar and pestle or a spice grinder.

Cooking Instructions

Sauté the Aromatics and Spices

Heat 2 tablespoons of olive oil or vegetable oil in a large pot or wok over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-6 minutes.

Add the minced garlic and grated ginger, and sauté for another 1-2 minutes until fragrant.

Stir in the toasted and ground spices, turmeric powder, ground ginger, and a pinch of sugar. Cook for another minute, stirring constantly, to toast the spices and release their flavors.

Add the Chicken Stock and Seasonings

Pour in the chicken stock or vegetable broth and soy sauce. Stir well to combine.

Bring the mixture to a simmer and cook for about 10-15 minutes, allowing the flavors to meld together.

Blend the Sauce (Optional for a Smoother Texture)

If you prefer a smoother curry sauce, transfer the contents of the pot to a blender and blend until smooth. Be cautious when blending hot liquids. Return the blended sauce to the pot.

Cook the Chicken and Vegetables

Increase the heat to medium-high and add the marinated chicken pieces to the pot. Stir occasionally until the chicken is browned on all sides, about 5-7 minutes.

Add the diced carrots, potatoes, and any other vegetables you’re using (like peas). Stir to combine.

If using coconut milk, pour it in now. Stir well to combine.

Bring the mixture to a simmer, then reduce the heat to low. Cover and let it simmer for about 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.

Season and Adjust:

Taste the curry and adjust the seasoning with salt and freshly ground black pepper as needed.

If the sauce is too thick, you can add a little more chicken stock or water. If it’s too thin, let it simmer uncovered for a few more minutes to reduce.

Serving

Prepare the Rice:

While the curry is simmering, cook your rice according to the package instructions. You can use any type of rice you prefer, such as jasmine, basmati, or even brown rice.

Garnish and Serve:

  • Once the curry is done, remove it from heat.
  • Serve the curry over a bed of cooked rice.
  • Garnish with freshly chopped cilantro and lemon wedges if desired. The cilantro adds a fresh, bright flavor, and the lemon wedges can be squeezed over the curry to add a tangy note.
