500g fresh spinach: Make sure to choose fresh, vibrant green spinach leaves for the best taste and texture.

1 teaspoon sesame oil: Sesame oil is used for garnishing and adds a nutty, fragrant flavor.

Additionally, you’ll need a wok or large pan for stir-frying, a pot for blanching the spinach, and some tongs or chopsticks for tossing the spinach in the pan.

Washing and Preparing the Spinach

Thoroughly wash the spinach: Rinse the spinach leaves under running water to remove any dirt, impurities, or pesticides. It’s important to wash spinach thoroughly to ensure it’s clean and safe to eat.

Trim the stems and discard wilted leaves: Cut off the tough stems and any wilted or yellow leaves. This will make the spinach more tender and pleasant to eat.
Blanching the Spinach

Boil a pot of water: Bring a pot of water to a rolling boil. Blanching the spinach helps to soften it slightly and remove any excess bitterness.

Blanch the spinach for 30 seconds: Add the spinach to the boiling water and blanch for about 30 seconds. This will turn the spinach a brighter green and make it more tender.

Shock the spinach in cold water: Quickly remove the spinach from the boiling water and rinse it under cold water to stop the cooking process. This helps to retain the vibrant green color and slightly crisp texture of the spinach.

Squeeze out excess water: Use a clean kitchen towel or paper towels to squeeze out any excess water from the spinach. This will prevent the dish from being too watery.

Stir-Frying the Spinach
