How to Prepare Hakka Noodles

Hakka Noodles, also known as Chinese Noodles in Peanut Sauce, are a delightful dish that combines the rich, creamy texture of peanut sauce with the chewy delight of noodles. For the Noodles:

  • 2 tablespoons of dark sesame oil

For the Dressing:

  • 6 tablespoons of dark soy sauce
  • 6 tablespoons of sesame paste (ground sesame seeds)

  • 2 tablespoons of sherry or any wine of your choice
  • 4 teaspoons of white vinegar
  • 1/4 cup of honey or sugar syrup
  • 4 medium cloves of garlic, finely chopped
  • 2 teaspoons of finely chopped fresh ginger
  • 1/2 cup of hot water

For Garnish:

  • 1 carrot, peeled and julienned
  • 1/2 firm medium cucumber, peeled, seeded, and julienned
  • 1/2 cup of roasted peanuts, coarsely chopped
  • 2 green onions, thinly sliced

Now, let’s dive into the cooking process. We’ll break it down into manageable steps for clarity.

Step 1: Cook the Noodles

Boiling the Noodles:

Fill a large pot with unsalted water and bring it to a medium heat.

Add the Hakka noodles and cook until they are barely tender but still firm. This usually takes a few minutes.

Once cooked, drain the noodles immediately and rinse them with cold water until they are completely cold. This helps to stop the cooking process and prevents the noodles from becoming too soft.

After draining the noodles well, toss them with 2 tablespoons of dark sesame oil. This will prevent the noodles from sticking together.
