Two culinary mavericks, Mischa Tropp from Toddy Shop and Brendan King from the renowned late-night eatery Derrel’s in Sydney, are set to merge their talents for a one-of-a-kind culinary experience in Fitzroy. Dubbed “Let’s Havva Chaat,” this exclusive pop-up promises an indulgent exploration of Indian cuisine, featuring six delectable dishes crafted by these visionary chefs.
Scheduled for Sunday, May 5th, the collaboration will take place at Tropp’s Toddy Shop in Fitzroy, offering lunch and dinner services from 12 pm to 9 pm. The event aims to showcase the rich tapestry of Indian flavors, with a particular focus on chaat – a term referring to savory snacks or small plates, albeit expanded to include an array of street food-inspired delights, as Tropp explains.
Both Tropp and King share a culinary philosophy deeply rooted in their cultural backgrounds. Tropp is celebrated for his mastery of homestyle Keralan cuisine, while King, drawing from his Anglo-Indian heritage, brings a distinctive flair to his creations, informed by his tenure at the esteemed Sydney restaurant, Baba’s Place.
Among the highlights of the menu are samosa chaat, sorpotel (pickled pork curry), and the tantalizing ros omelette, a Goan specialty where a sumptuous omelette is lavishly adorned with curry. Priced at $50 per person, reservations are essential, with vegetarian options available upon request.
Excitement looms as the dynamic duo anticipates future collaborations, with Tropp eyeing a forthcoming pop-up at Derrel’s in Sydney. Additionally, Toddy Shop enthusiasts can look forward to more gastronomic experiences on the horizon, as Tropp welcomes esteemed chefs Harry Mangat of Biji Dining and Rohit Singh of Avani Wines for an event on Sunday, May 19th.
