Chinese Steamed Fish

Materials

  • 1 whole fresh fish such as sea bass or red snapper, cleaned and scaled
  • 2-3 slices of ginger
  • 2 green onions cut into thin strips
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice wine or dry sherry
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • Fresh cilantro leaves for garnish

Instructions

Step 1: Prepare the Fish

  • Start by choosing a fresh whole fish for steaming. Opt for varieties like sea bass or red snapper, as they have firm flesh that holds up well during steaming. Ensure the fish is cleaned and scaled properly. Score both sides of the fish with a few diagonal cuts to help it cook evenly and absorb the flavors.

Step 2: Season the Fish

  • Place the fish on a heatproof plate that fits inside your steamer. Sprinkle the ginger slices evenly over the fish, both inside and outside the cavity. This will infuse the fish with a subtle aromatic flavor. Next, sprinkle half of the green onion strips over the fish, reserving the rest for garnish.

Step 3: Prepare the Sauce

  • In a small bowl, combine the soy sauce, oyster sauce, rice wine or dry sherry, sesame oil, and sugar. Stir the sauce until the sugar has dissolved completely. This sauce will add a rich umami flavor to the fish while enhancing its natural taste.

Step 4: Steam the Fish

  • Fill a wok or a large pot with water, making sure the water level is below the steaming rack. Place the plate with the fish on the rack and cover the steamer with a lid. Bring the water to a boil over high heat, then reduce the heat to medium-low and let the fish steam for about 10-15 minutes, depending on the size of the fish. The fish is cooked when the flesh turns opaque and easily flakes with a fork.

Step 5: Garnish and Serve

  • Once the fish is cooked, carefully remove the plate from the steamer using oven mitts or tongs. Sprinkle the remaining green onion strips over the fish and garnish with fresh cilantro leaves. The vibrant colors and fragrant aroma will make your dish even more appetizing.

Step 6: Optional Enhancements

  • If you want to add extra flavors and textures to your Chinese steamed fish, consider incorporating some optional enhancements. You can add sliced red chili peppers for a spicy kick, julienned carrots or bell peppers for added crunch, or even shiitake mushrooms for an earthy taste.

Step 7: Serving Suggestions

  • Chinese steamed fish is often served as part of a multi-course meal. It pairs well with steamed jasmine rice, which absorbs the delicious sauce from the fish. You can also serve it with stir-fried vegetables like bok choy or gai lan (Chinese broccoli) to create a balanced and nutritious meal.
