Equipment

Materials

For the Dumpling Wrapper:

  • 2 cups of all-purpose flour.
  • 3/4 cup of hot water.
  • 1/2 teaspoon of salt.

For the Filling:

  • 1/2 pound of ground pork.
  • 1/2 cup of minced Napa cabbage.
  • 2 stalks of green onions finely chopped.
  • 1 tablespoon of minced ginger.
  • 1 tablespoon of soy sauce.
  • 1 teaspoon of sesame oil.
  • 1/4 teaspoon of white pepper.
  • 1/2 teaspoon of salt.
  • 2 tablespoons of chicken or pork broth.

For the Soup:

  • 2 cups of rich chicken or pork broth cooled and clarified (allow the broth to chill so that the fat solidifies and can be removed).

Instructions

Creating the Dumpling Wrappers:

  • Mix the Dough: In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and pour in the hot water. Mix the water and flour together using chopsticks or a fork until a shaggy dough forms.
  • Knead the Dough: Turn the dough out onto a floured surface and knead it for about 5-7 minutes until it becomes smooth and elastic. Form the dough into a ball, cover it with a clean kitchen towel, and let it rest for 30 minutes.
  • Roll Out the Wrappers: After resting, divide the dough into smaller portions. Roll each portion into a smooth ball. Flatten a ball slightly with your palm, then use a rolling pin to roll it into a thin, circular wrapper. Aim for a diameter of about 3-4 inches.

Preparing the Filling:

  • Combine Ingredients: In a mixing bowl, combine the ground pork, minced Napa cabbage, chopped green onions, minced ginger, soy sauce, sesame oil, white pepper, salt, and chicken or pork broth. Mix well until all the ingredients are thoroughly incorporated.
  • Test the Flavor: To ensure the seasoning is to your liking, cook a small amount of the filling in a pan and taste. Adjust the seasonings if needed.

Assembling the Soup Dumplings:

  • Place the Filling: Take a dumpling wrapper and place about a teaspoon of the filling in the center.
  • Pleat and Seal: Gently pleat and fold the edges of the wrapper, pinching them together to seal the dumpling. Leave a small opening at the top to allow for the soup to fill the dumpling.

Steaming Process:

  • Prepare the Steamer: Line a bamboo or metal steamer with parchment paper or cabbage leaves to prevent sticking. Place the dumplings in the steamer, leaving some space between each dumpling.
  • Steam the Dumplings: Steam the dumplings over boiling water for about 10-12 minutes. As they steam, the broth inside the dumplings will turn into a flavorful soup.

Serving and Enjoying:

  • Serve Immediately: Once the dumplings are cooked, serve them immediately while they're still hot and the broth is steaming.
  • Dipping Sauce: Prepare a dipping sauce by combining soy sauce, rice vinegar, minced ginger, and a touch of sesame oil. Dip the dumplings into the sauce before taking a bite.
